Since it’s the season of pumpkin everything, here is one of my favorite recipes to make in the fall. It’s perfect to freeze and have for when guests are in town or to bring as a host gift!
– 1 1/2 cups sugar
– 2 eggs (beat slightly)
– 1/2 cup vegetable oil
– 1 cup pumpkin
– 1 3/4 cup all purpose flour
– 1 tsp baking soda
– 1/4 tsp baking powder
– 1 tsp salt
– 1/2 tsp cinnamon
– 1/2 cloves
– 1/2 tsp nutmeg
– 1/4 tsp allspice
– 1/3 cup water
– 1/2 cup walnuts or pecans (optional)
Directions:
1) Mix the sugar, oil, pumpkin and eggs in a medium bowl.
Add the dry ingredients and water in the order given then mix well. Add nuts if desired.
Pour into a greased and lightly floured loaf pan and bake at 350 degrees for 1 hour or longer if needed. To see if it’s done, stick knife in middle of loaf, if it comes out clean it’s done! Recipe makes one loaf.
