Summer Cooking and Entertaining Made Easy

Creamy Coconut Soba Noodles Salad

I love this recipe because you can feed a lot of guests and it’s an easy and delicious dish! I use Roland Organic Soba Noodles. These Asian noodles are made with quality organic ingredients which I love. You can find the recipe from Rolandfoods.com and tweaked it based on allergies and likes in our home.

Noodle Ingredients:
12.8 oz. (one package) Roland Buckwheat Soba Noodles
1 bunch green onions, sliced thin
2 tablespoons cilantro chopped
¼ cup julienned carrots
¼ cup red and white cabbage, sliced thin
¼ cup chickpeas (which I fried in olive oil and then seasoned)
Salt and pepper to taste

Coconut Dressing Ingredients:
One Can (13.5 oz.) Coconut Milk
¼ cup peanut butter
1 tablespoon honey
2 tablespoons rice wine vinegar

Directions:
Cook the soba noodles in salted boiling water for 5-7 minutes or until they are done. Strain the noodles under cold and set aside.

Place the coconut dressing ingredients in a food processor. Mix until the dressing is smooth and creamy. Season with salt and pepper.

In a large bowl, place the cooked soba noodles, green onions, cilantro, carrots, chickpeas and red cabbage. Pour the dressing on top and mix together. Adjust seasoning with salt and pepper.
Garnish with green onions and sesame seeds (I left off the sesame on mine since my husband is allergic).
